Wedding Catering at the Palmetto Club – Amanda and Chip (click for photos)

A couple of weeks ago we had the pleasure of catering a wedding at the Palmetto Club at Fish Hawk Ranch for Amanda and Chip. They had visited with several other catering companies in town and had almost booked one before we were introduced by Staci from Unique Event Design. Since they were lovers of good food and wanted something unique, we were a perfect fit to cater their wedding.

Of course the menu included our famous Fried Mac-N-Cheese Lollipops as a cocktail hour appetizer, but Amanda also challenged us to create a fun and cool summertime appetizer that was also pink! This led us to the creation of the Watermelon Gazpacho Shooters. Last, Sweet Thai Chili Shrimp were passed on Asian soup spoons while a pink wedding punch was served in hurricane glasses.

The buffet style menu included our signature Tuscan Chicken with Cannelini Bean Salad and Penne Pasta Primavera, with fresh summer vegetables in a light roasted pepper cream, all served from our elegant hand hammered copper chafers and pealla pan.

To finish up the evening, guests accompanied their wedding cake at our coffee station, complete with beautiful copper coffee urns, which can be seen in the photos below.

Although I was very pleased at the job we did for Amanda and Chip, I had a smile on my face for a week after a glowing review posted on WeddingWire.com. Reviews like this are the reason that I love weddings and I love catering:

Kevin did an amazing job with our wedding. We had a wonderful and unique menu that tasted fantastic. Check out his mac-n-cheese lollipops!! Great service, wonderful enthusiasm, and just a great guy.. I would recommend him for anyone in the tampa bay area. Especially if you are looking for good quality food that isn’t bland and boring.
